If only vegetables
1) tasted good, I can tolerate broccoli with cheese, asparagus and corn and raw carrots, but cooked carrots are so gross.
2) didn't have a weird texture when cooked, looking at you carrots.
Tomatoes are a fruit so they don't count, so I would say its been 3 or 4 years since I last age a vegetable. Unless french fries count.

So long as they're not over cooked so as to be mushy they're fine for me. Even better with the skin left on if it looks nice.
But have you tried them roasted? Like one would do with Parsnips (but not the same taste). Either sprayed with Pam and in the oven or in an actifry with a drop of extra virgin. Totally gorgeous, so much so I rarely have them any other way now.

My wife makes a lot of veggies though, she eats pretty much any veggie known to earth,

Vegetables DO taste good. Get a veggie cookbook and use some of your extensive free time usefully, and for own your benefit.

Grilled asparagus...
Mushrooms sauted in butter,
Mixed leaf salad with a nice dressing,
Cesar salad,
Stir fried broccoli or bok choi ?
I think the trick is how the veggies are prepared, seasoned or what they are paired with.
Oops, I just noticed you can already 'tolerate' some of my list. Keep having them, fairly soon you will love them. I agree carrots have to be raw !!

There are other variables in what makes food appealing than are mentioned in the article. Years ago at work I made a platter of latkes with cheese and green onions and left them in the office. When I stopped in at end of day our financial officer was glaring at me. I asked what was wrong and she gestured to the common area where her son was finishing off the plate. She said that at home she couldn't get him to eat potatoes in any fashion and I'd clearly succeeded, and she felt insulted.
