It's more than that, the curing's different somehow and back bacon just isn't available. It seems though that making bacon (literally making bacon) is simple enough so I've ordered a pig and will give it a go.

We already buy all manner of trotters and tales and offally bits for the dog so I thought we'd probably use the whole thing, why not give it a go?

Bacon like what my Mum gets from Sainsburys, that's what I want. I can't find it and I think I'm a pretty resourceful seeker out of food items.

I think the UK definition of back bacon is different to the Canadian....

UK back bacon to me is bacon that has a streaky portion attached to the round bit - for want of a better explanation....

All of the back bacon I've seen here is purely the round part....

Holy crap why give all the good stuff to the dogs,,,pigs tail slowly boiled with saurerkraut and boiled spuds and musterd mmmmmm yummy:thumbup:
trotters the same.. Cook the whole haed for braun or head cheese as its called here.

We're nervous about that but it's not as if pork bellies are a premium cut, if it doesn't work the result can go into the chickens.

Both are back bacon. :)

One has some of the streaky bacon left on the other not, and they may be cured differently.
