It's more than that, the curing's different somehow and back bacon just isn't available. It seems though that making bacon (literally making bacon) is simple enough so I've ordered a pig and will give it a go.
Will you blog your progress on this? |

Back bacon is readily available virtually everywhere. Perhaps you have a different definition of back bacon than the rest of us. ;) |

All of the back bacon I've seen here is purely the round part.... |

Bacon like what my Mum gets from Sainsburys, that's what I want. I can't find it and I think I'm a pretty resourceful seeker out of food items.

(I think) We're nervous about that but it's not as if pork bellies are a premium cut, if it doesn't work the result can go into the chickens. |

One has some of the streaky bacon left on the other not, and they may be cured differently. So in a sense we are both wrong. :p From wikipedia "In Britain, bacon made from the meat on the back of the pig is referred to as back bacon or back rashers. It usually includes a streaky bit and a lean ovoid bit, and is part of traditional full breakfast commonly eaten in Britain and Ireland. In the United States, back bacon is called Canadian-style bacon or Canadian bacon, but this term refers usually to the lean ovoid portion." |
