Help, the tropics have turned my spices to concrete!
#1

Tonight I’m in the kitchen preparing some brine ready to experiment smoking some red snapper fillets to make kedgeree.
I'm much better at gardening than cooking, and pretty lousy at gardening, so have already driven Mrs JC3 to distraction, asking her “Where’s this? Where’s that?...
I’ve found the Garlic Powder but it’s turned to concrete in the jar, ditto the Onion Powder.
Does anyone have any tips to prevent this?
I just found this:
Stop Spices from Clumping
...which suggests putting a few dried beans into the containers (rather than rice which then falls out through the holes). Sounds sensible, but what beans work best?
Any other method?
Thanks

Use them quicker? No, I'm serious, even if you find something to stop them going hard there is a limit as to how long they will retain their flavour.
