Floury apples? Red delicious apples are bland as all get out, are those the ones you mean? Plus their skin is too tanniny (new word) for my liking.

Granny Smith and Pink Lady are my go-to apples of choice these days. Can't go wrong with either if you ask me.

Trying to remember, haven't had a red apple in years. You bite into one and it kind of crumbles as you chew. Not like a GM that's crisp and (sorry sorry sorry) moist (wet also sounds wrong).

Think that's Red Delicious. Does it have a really dark red skin that has a bitter taste?

I go for Galas here, in England the Cox's Orange Pippin is still king for taste.

And why oh why in this vast and fertile land can they not grow a cooking apple? Bramleys were the best for baking.

I miss Bramleys, we don't have them here either. An apple pie isn't an apple pie if it hasn't got Bramleys in it.

My favourite apples are Granny Smith. Hubby likes Russets
but they are only available around Christmas.

I love Mahana apples here though I haven't eaten an apple since my jaw 'locked' last July . I've been using Granny Smith's as cooking apples here in NZ too. A poor substitute for a Bramley IMHO. However I do have a Braley apple tree growing in my garden now. It's about 4 years old and has a few apples on it this year. They aren't very big though. Auckland doesn't really get a good enough frost for apple trees to grow successfully.

BEVS ask at your local King's Plant Barn to see if they can get you one in. That's how I got mine. You might have greater success on the south island.
