Enough pastry for 240 mince pies.



10 oz plain/all purpose flour
2 tablespoons caster sugar (USA granulated works perfectly well)
zest of one medium to large orange
8oz (2 sticks) unsalted butter - chilled
6 tablespoons of orange juice (add water if your orange isn't that juicy)

Whizz flour, sugar and zest in food processor until mixed.
Chop the butter into chunks and add to the flour mix, whizz until a fine breadcrumb texture is achieved. (You should still be able to just feel bits of butter if you squeeze the mix between your fingers.)
Add in 4 tbsp of the juice and whizz again, add the rest until the pastry comes together.
Lay out a sheet of cling film and press the pastry into a slab and wrap it.
Let rest in the fridge for at least an hour before using.
Roll out with plenty of extra flour and use as desired.
For mince pies bake at 190C for 15 to 20 minutes.

I've not made one for us this year (We both need to lose weight!) but 3 friends requested Christmas cakes from me. It's really easy to make.
