What about Oz ??
Ok,
NZ is looking bleak as every turn we take we hit a brick wall. Is it possible to visit Oz on a Tourist type Visa and look for permanent work? We came to NZ on this with a Long Term Business Visa (Self Employment) as a back up. The wife even had a job offer, which was withdrawn when the Immigration Service announced the Gen Skill category closed (thanks NZIS). Now, even if the LTBV is approved it gives her a temp work visa which is unacceptable to most NZ employers forcing us to live at a lower level than in the UK. Is this the case in Oz?
It's pretty bad if we do have to return to the UK, but NZ has all its doors closed so maybe Oz still wants skilled people .. ??
Somehow I doubt that we'll match up as a self employed guitar repairer/luthier and a multi-lingual graduate with export experience...but hey, I thought I'd ask in case someone knew....

Hard to say for Australia without seeing more detail.
Musical Instrument Repairer fits into the occupation Tradespersons and
related workers not elsewhere classified (4999-79) so as long as you
meet TRA requirements, that's a 60 point skilled occupation for
general skilled. On the hand Musical Instrument Maker falls into
2531-79 (Visual Arts and Crafts Professionals nec) which isn't on the
skilled occupations list. So it may depend on what exactly you do.
If you could find an Australian employer keen to hire you then
employer nomination might be an option.
Even business skills migration, depending on your business background
might be an option, but only if you don't get to the general skilled
pass mark (general skilled gives you PR straight away, while business
skilled no longer does).
Talk to a good registered migration agent in Australia.
