minor children of NZ citizens
How easy and/or difficult is it to petition minor children once one
parent becomes a NZ citizen? How old is one considered a minor in NZ?

Any reason/s why the children were not on the original immigration
application?
The age info should be on the NZIS website.

Actually, I did include the children in the application but I am
initially travelling alone to get settled, find work, before they
follow. This will make it easier for the family to adjust. It would
be more stressful for me to have the family in NZ whilst not sure of
when I can secure an appropriate employment.

Have they got valid migration visas or not?
If not, then you should look at the information at http://www.immigration.govt.nz regarding sponsorship of family members. IF they were declared to NZIS when you migrated originally then that's one less complication to think about.
