Hi,
Is it true that we have to stick with the same employer for 3 years after the ENS is approved?

No,
my understanding is your employers makes agreement with Immigration that they will have a job for you for the next 3 years.
However you can in theory move on to another job or state. However best not to do this the first week your visa is granted
