It's hard not to read these boards and get worried about EVERYTHING you
read - but it makes me wonder how the process differs dependent on the
type of visa.
Does the time-line differ dependent on the type of Visa one has applied
for?

Processing times vary not only by type of visa but by country (or at least that is how it reads on here)
From London my husbands spouse visa took 24 hours, other people on skilled visas can wait months if not years to get everything through.

Absolutely - different types of visa have different processes before they can be granted, for example the 138 visa requires sponsorship from a family member, which requires that the family member is checked to make sure they are a sound sponsor and should be able to suppoert the visa applicant if needs be, whereas the 136 doesn't go through these checks. MODL visas are also supposed to be processed quicker, as the people with these skills are more in demand, so Australia wants them quicker and treats them as priority.
