If you mean an upper age limit, there is none (provided sponsor can meet sponsorship obligations).
There is usually a lower age limit of 18.

Because of my uncles age, we would like to defer any responsabilities from him, issues such as accomodation and financial support, to our assurors. Our assurors being our friends.
As far as I am aware, our assorers can write a letter to DIMIA confirming that they will take full responsabilities for our welfare if anything went wrong.
As long as the assurors are financially stable (Have a certian amount of income), then all should be fine

So if I'm reading you right. We can nominate our Aunt/Uncle to be our sponsors in the skilled migration sponsored catagory but also include a letter from say our cousin that as extra backup so to speak they would be assurers.
Is this right.

You need a sponsor and an assurance of support.
Your sponsor has to be related, for example, aunt, uncle etc.
Your assurance of support does not have to be the same person as your sponsor and does not have to be related to you, but has to be an Australian citizen.
The assuror has to be earning a certian amount per annum. I think it is around the $38,000 mark and have to agree to pay a bond of $3500 for the first adult, $1500 for the second. No bond is required for anyone under the age of 18

A 'letter from your cousin' will be no use at all for an assurance of support - you must submit a properly completed form 28 with supporting documentation.
If you do not include this with your application, DIMIA are likely to refuse it.
A completed form 40 must also be included in your application, with supporting documentation.
Rob - you are incorrect to say that the assurer must be an Australian citizen. PRs and eligible NZ citizens can also act as assurers.
