once one has informed the CIC about it, would it be ok if one provides
them with a forwarding address in the US to facilitate safer and
faster delivery of mail ?

Yes, you may still keep US mailing address. Your file has 2 addresses - one is
your residential address and another one is your mailing address - and they
don't need to be same, not even in the same country.

Re: medical test fee in US
Continuing the address-change discussion Mr. Miller, is it required to let the visa post know the residential address of the dependent too in case s/he is residing not with the principal applicant? For example, in my case, the principal applicant is on EA in Canada and I (dependent) am still in the US. Also, would it be prudent to let them know my status too in the US and/or could they ask for the dependent's status in the country?
