I don't know how true it is but I was told by my notary in Miskolc to have a document drawn up in both English and Hungarian you can only use a Notary who is legally certified to work in both languages. Apparently there is no one in Miskolc and one would need to go to Budapest.

I would dispute that.
If a document is drawn up in English and then translated by the Hungarian State translation agency (certified translation) this must be acceptable as this is the agency that the legal system uses for official documents.

Edit to say if a will is made in English it will have to be translated by the above office when it is invoked anyway.

[Question] If relying on an English will, would it be possible (I am assuning it would ) be possible to have it translated "now" (shortly after it was signed), and then the official translation stored with English original, saving your heirs the inconvenience/ expense/ delay of getting it translated after you die?

No reason but if you are going to do a side by side translation then this needs to be done before it is signed. If later you want to make a change then all has to be done again whereas if it is done after the event then any changes life may require are easier and cheaper and the 2 - 3 weeks to get an official translation in the scheme of things won't matter (and let the heirs file a complaint to you!) Small(ish) changes can be made with a codicil but more than one gets messey.

My understanding of wills in Hungary is that
1 If it is signed in front of a public notary then the only your signature and the notaries signature and stamp are needed
2 If you type it up then you need to sign it along with 2 witnesses (every page which also need to be numbered)
3 If you hand write it then you sign it (every page) and no other signatures are needed
4 If you can't write for some reason then a verbal statement in front of 2 witnesses is enough (e.g. deathbed will)

The witnesses don't need to understand what the will says, they aren't witnessing the content just the fact that you are signing the document. The notary maybe (will be) unhappy stamping a document that they can't understand so for a notary a translation will be needed.
