Ok if we do decide to accept the job offer with airbus in Toulouse for 5 years how easy is it to take our dog?

What paperwork or jabs will she need? Will she be able to come straight there with us?

Yes, she can, but there is a time factor for the rabies vaccine she has to have, not sure it's 3 or 6 months. Best check your vet. Also do a site search. Some rules have been relaxed, again check your vet or check, I think, the Environment Agency in UK. Sorry, not terrible helpful.
