I have been working in Spain and paying my taxes in Spain for the past 5 years but we will be moving to Nicaragua. In order to support our selves we would like to work. So I would like to register as self-employed again in the UK(as it is cheaper in the UK to be self employed than in Spain) without moving back to the UK. Is this possible? Or Legal?

Don't you need to be resident in UK to be registered as self-employed?
However I have to say that many Chinese companies do that. They register fictitious companies in UK and then trade on Ebay under English law, but they ship the goods from China.
If you don't get replies here ask on the Contractors UK forum:

Thank you for your reply!
I don't want to trade just pay my taxes in the UK. As I will work as freelance esl teacher.
I won't be a resident any where, not in Nicaragua, nor the UK, I think not even Spain.
