Application problem
So my wife got an email yesterday saying that UKVI needed to see a scanned copy of my divorce certificate, which I sent to them within about an hour. We have a priority service application which reached its 30th working day today, so UKVI have escalated it, but say that can take a further 15 working days, and I've contacted my MP to find out what the delay is.
My problem is, how do I even know they received the document, and if that's all they needed why has this delayed the processing of the application?

No-one would have looked at your application before today. The delay is due to too many applications for too few ECOs. If you sent the scan as per their instructions you should assume it has been received.

Just a quick update. According to my MP they'd finished looking at the entire application, then asked to see my divorce certificate. I was not told when we would get a final decision. It's extremely frustrating.

That makes sense. Your ECO has and you meet the requirements bar the missing divorce certificate. Chances are it will be granted next week if it hasn't been already.

Imagine it is frustrating for the ECO's to be constantly asking for missing documents.

Re: Application problem
..... as your divorce certificate would have been a mandatory document (to prove you were legally divorced and therefore legally married to your current spouse), and you only married in March of this year, had you sent it off in the original documentation you would not have had this wait.
