We got a lovely room for $150 a night at the Fairmont, paid in advance and got the discount, very central hotel, and amazing cocktails..booked this yesterday for the 28th Nov for 3 nights.
Also agree, hiring bikes is a great way of seeing loads, you can cycle sea wall around to Granville and Stanley Park.
It is worth going over Lionsgate to North Van, and Cap bridge and Grouse if you have never seen them before.
If you are only there for a few days then this book is v good for highlighting the hotspots...

capones on richards (i think) is good for food and live music in the evening, the yale on granville (bridge end of granville) is a great blues bar.
definitely agree with other posters about lynn valley, i went to capilano the first time i went and the lynn valley the second; there are less people at lynn and that gives you a bit of peace to enjoy some spectacular forest and water fall action. plus it's free
since you're going in january most of the obvious summer beach type things are off the menu. if you've got the cash maybe do a whale watching tour? i went and it was great
just drift about and enjoy the vibe of the place, it's very relaxed and you'll easily find something to interest and amuse you. also, try the sushi
you can get really good stuff pretty much everywhere...
