A pipe dream?

I hae lived in China for three years and enjoyed and embraced the life there.
It has always been my "pipe dream" to emigrate to Canada/OZ/New Zealand.
Unfortunately I have returned to the UK as I am seperating from my husband, (we have one child), he is staying in China with his new partner. He wasn't prepared to pay out for our rent/education/medical insurance etc etc, unless you live exactly like a local the big cities are expensive places to live.
I do not want to give up yet on my dream though to emigrate (this had been a shared dream with my husband, neither of us had planned to return to the UK for the forseable future) but I am back here now to go through UK courts etc with the divorce.
Can anyone share any positive stories/info on how you can emigrate as a single mum? I had a career in global sourcing prior to being a mum and moving to China. I am willing to re train to improve my chances but wonder what are the best options considering jobs in demand now may not be the same by the time I have done say a 3 or 4 year course? what about TEFL? is that an option?

I can't help with the being a single mum bit, but you say your career was in 'global sourcing'. Could you expand upon that? I have worked in Purchasing & Logistics for x years in both the UK and Canada so might be able to provide some insight.

I was a global sourcing manager for a corporate clothing company in the UK, responsibilites included costings for competitive tenders/critical path creation/management/sampling/bulk order purchasing/sourcing new suppliers/supplier audits. Clients were blue chip UK companies such as Eurostar/BA and many hotels/holiday companies/airlines. Suppliers were set up in countries such as Poland/Singapore/China/Sri Lanka/Indonesia/Malayasia. I worked very closely with all areas accross the business delivering re brands in short timescales on budget and travelled frequently to oversee production/conduct audits/build working partnerships with suppliers.
