Anyways, I just turned 27 in January, am Married to my darlong hubby of 7 years and have two kids. We are both students and are looking foward to getting to know you all!

Hi, emmaguk26, and welcome to the BE forum.
The questions you have asked about your police record are way beyond the scope of the Meet and Greet forum. You should ask those questions in the Canada Immigration forum.
Yes, your and your husband's lack of work experience will hamper you if you want to fast-track your entry to Canada.
Your children will not be a problem. Canada welcomes children with open arms, and in my opinion it's a good country in which to raise children.
Generally speaking, it helps to go to a region in which you can find work, unless you can start a business, enter the country as investors (which requires lots of money), or enter via the Nova Scotia Community Identified Stream. It's not just a matter of finding a job. If you want to fast-track your entry to Canada, you have to find a job that no qualified Canadian resident wants. That usually means going to a region in which there are labour shortages (unless you enter by one of the other methods that I mentioned). But, without work experience, it'll be tough to get such a job.
You say you've read the beginner's guide. I assume you mean the Wiki article called Beginner's Guide to Canadian Immigration, to which there is a link in my signature, below. At the risk of being unkind, I don't think you "get it." I would suggest you return to it and read it again, along with the articles to which it provides links.
