My family and I have our medicals booked for the 30th Nov, but hubby has been offered a job in Olds (Alberta), so, can someone advise if he can leave for Canada before Nov and get his medical done over there

Yes, assumming he is planning to apply for a Work Permit at the port of entry, accommpanied by all the correct paperwork (LMO, etc....) and that this position is not on the list that requires a medical to be taken in advance of issuing a WP (nursing, medicine, working with vunerable people etc). I assume the medical to which you refer is for a Permanent Residence appication? If so, then the process can be completed from within Canada (with the exception of landing).

The work permit will probably be applied for by the canadian company with all the paperwork required, yes the medical is for Permanent Residency, what do you mean by the exception of landing?

she means you cant actually land from within Canada, you would need to physically cross the border into the states and come back in. therefore "land". Some people only stay in the states for 20 min others make a holiday out of it.
Also its not the employer that applys for the work permit only the lmo, your husband would apply for the work permit himself.
