If you want Maple Syrup, then you must go to a sugaring off!!!, I think this tends to happen in the March of each year, we went when we stayed with my sister in Montreal a few years back, good fun, Maple syrup on everything, baked beans, ham, eggs, you name it....and just when you thought you could eat no more, they take you outside and pour the stuff on the snow and stick a stick in it, and there you go a Maple syrup Lolly!!!! Its a must, just to say you did it!!!

Loads of fun. We tapped our sugar maples while living in Kitchener-Waterloo. Lots of work, but worth it....Starts tapping about the middle of march and takes about 2 weeks.
The mennonites call tapping for maple syrup a "sugaring bush".....(a groups of trees being tapped)
