Hello, Paul, and welcome to the BE forum.

Grab a pot of tea (a mere cup won't do it, once you get going) and read the BE Wiki article called Beginner's Guide to Canadian Immigration.

As I mentioned in this thread, it would help us to know what kind of work you do. That makes a big difference. If people in your occupation are in short supply and in demand in a province, it might make sense to apply for a temporary work permit and later upgrade to a permanent residence visa. Alternatively, depending on your occupation, it also may make sense to apply for permanent residence through a Provincial Nominee Program.

If people in your occupation are not in such great demand that a prospective employer could get a Labour Market Opinion, then there may be merit in considering Nova Scotia's Community Identified Stream.

In order for us to be able to offer any opinions, we have to know some information about you. At least you've now stated that you're looking at Nova Scotia and New Brunswick. That in itself is a help to us. If we knew your occupation (and, if you're married, your wife's occupation), we'd be able to come up with even more ideas.

Windscreens are called windshields in Canada.

A Windshield Repairer falls under the umbrella of Motor Vehicle Body Repairer (#7322 on the National Occupational Classification). (A Motor Vehicle Body Repairer or Bodyman is Canadian for Panel Beater.)

This occupation appears on the list of Occupations under Pressure in Alberta

Your partner's occupation falls under the umbrella of Theatre, Fashion, Exhibit and Other Creative Designers (#5243 on the NOC).

This occupation appears on the list of Occupations under Pressure in British Columbia.

If an occupation is listed as an OUP in a given province, you have a better chance of getting a Labour Market Opinion (LMO). An LMO is forthcoming when the employer has advertised the job across Canada for 3 months and has failed to attract a qualified Canadian resident to the position. That, in turn, is what is needed before you can apply for a temporary work permit. And a temporary work permit is what you need to get your foot in the door.

Labour shortages are a double edged sword. The provinces in which there are labour shortages are the provinces in which you have a better chance of securing the job offer and the LMO that will lead to a work permit. But the economic booms and rapid growth that create the labour shortages result in expensive real estate prices (or at least expensive by Canadian standards).

I suggest you read the following Wiki articles:
Hope that helps.

Yes, but not right away. First you have to get into Canada on a temporary work permit (TWP). Then, if you receive an offer of permanent employment from your employer once you're working in Canada, you can apply for a permanent residence (PR) visa.

The offer of a permanent job will give you 10 points on your PR visa via the skilled worker route. If you've lived in Canada for a year, you'll get another 5 points for that. You need 67 points in total.

If you submit a PR application with a permanent job offer attached to it, there is a good chance that the processing of the PR application will be fast tracked.

But things are a bit up in the air at the moment. Legislation has been tabled, but not yet debated, that would give the Minister of Citizenship and Immigration additional discretionary powers. She could, for example, raise the number of points. The speculation is that she won't do that, but that foreigners who have organized employment in Canada will be assigned even greater priority than before. Prior to this, things already were stacked in favour of foreigners who'd lined up work in Canada. But folks are guessing that, when this legislation passes and the Minister receives greater discretionary power, she will increase the emphasis on securing employment. This is explained in a thread called Amendments to IRPA [Immigration and Refugee Protection Act] as tabled.
