Hi,
If my skill is not on the list, how hard is it to get a job in Canada and have an employer sponsor my application?

It would be quite difficult. You would need to find an employer who needs your skills and will apply for permission from Gov't of Canada to hire you. The Gov't may well decide not to permit such a hire.
