Default Flour

Hi all - we are having a cookie exchange at work and I have to bake 7 dozen "UK style" cookies - I need advice on flour - what is the canadian equivalent to Self Raising and Plain flour

You can get a Brodie brand "self raising" flour in the supermarkets,

Or else "the bulk barn" sells it in, well, bulk...


or else make your own by adding the well documented amounts of baking powder etc to regular (plain) "All purpose" flour.

For each cup of all-purpose flour, add 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt.

Flour here has a somewhat different degree of hardness (gluten level) to the UK, which is why you see separate sorts of flour for bread etc with a higher glutin content.

Thanks all - a bulk barn has just (a couple of months ago I think) opened near me so I guess I will be paying them a visit at the weekend. Thanks again

Well - made my first "test batch" of vienesse fingers for the cookie exchange - took them out of the oven an hour ago - non left - Mikes words - they just melted in my mouth!!! so pleased first attempt at baking since arriving in CA
