Advice - Driving license

Hi All,
I have been living in Belgium for the past few years and obtained my Belgian Driving License there (I have no IDP). I will have had it for 2 years in December. I have recently become a permanent resident in Ontario and have just tried to do the straight swap. The problem is that if I swap it right now, I will only get a G2 license meaning I need to take a test. My 60 day allowance for driving with a foreign license will run out at the beginning of October. Now, can I just not drive from October to the beginning of December and then try and exchange the license again in december for a full one?
Would it really be a punishable offence to drive from October to December??

of course it will be if you get caught. you'd be driving without a valid license.

Swap it now and do the G2 test. You never know, you might get lucky and have them do the date the "wrong" - 2nd July (when I did my test) became 7th February - bonus
