The right stuff is awesome, pork dripping, especially the brown jelly at the bottom of the pot, wonderful.

Our Oz organic butcher has it however you want it. Should I mention the crocodile burgers he sells?

I had a Christmas job when I was 16 when I was at the other end of some of those tubes at a department store in Manchester. We had a bread van that called several times week and sold lovely warm fresh-baked loaves. My mum and I used to share the crust, with butter, while it was still warm and crisp.
