Default For the cooks out there

I love Mushrooooooooooooms... like they are going out of fashion.

Yanno when you have a takeaway ( uk that is ) ... as aussies dont really like mushrooms...

anyway, when you have takeaway and you have a portion of mushrooms, in that foil dish.. and they are sooooo yummy...

HOW DO THEY COOK them...?

Wife says must be boiled and then doused in sumat.

Im not sure, but i think sesame oil comes into it...

Does anyone really know??

What kind of take away do you mean? I love Mushrooms too and have a great recipe book. I love Mushroom Pilau and when I cook Mushies with steak, I always cook them in garlic and lemon juice, absolutely mouth wateringly, scrummylicious.

Just the mushrooms on their own.. yanno when you pop in the takeaway, in uk... and get fried rice ( special if your rich ) lol... chicken curry, and side order of mushrooms.. its BEATIFUL.. in some kinda soy liquid, but they arent fried.. they are just divine !

My guess is they are cooked in Oyster Sauce, water and a little cornflour. When we have a Chinky here in Perth, I always order a mushie omelette and it's cooked in a type of gravy which I have always thought to be the above ingredients.

Dya think they boil the mushrooms ( not something we have ever done ) ?

Or kinda saute them.. or what

I know some of my recipes say to soak mushrooms in warm water before chucking into the wok. I found this recipe and thought it sounded okay...

CHINESE BROWN GRAVY

6 tbsp. meat drippings
6 tbsp. flour
2 tbsp. soy sauce
1 1/2 c. hot water
1 tsp. brown gravy sauce
1 tsp. salt
Dash of pepper
1/2 c. cold water

Melt fat, blend in flour, add sauces and seasonings. Add cold water. Mix thoroughly. Stir in hot water. Cook until smooth and thickened, stirring constantly.

Could they be marinated in sesame oil and soy and then stir fried with the marinade to keep them juicy,I know the ones your talking about and they are lush

Sesame oil has such a distinct flavour though, so I wouldn't use it unless a particular recipe recommends it. I find it over powers delicate tasting food. I don't think Chinese use it for their gravies either.
