Another cover I love is The Killers version of Romeo and Juliet - I loved the Dire Straits original but I think this one is even more beautiful than that.
I put this link because it has a bit at the beginning where they're talking about why they did the cover
(And Officer Dibble.. Shatner is a genius, lol!)

Oh, I was also going to say Leona Lewis' version of Snow Patrol's Run.
I remember hearing her do it on The Live Lounge (a great thing to listen to if you like hearing covers with a difference) and it was beautiful and spine tingling and just fantastic. And I'm not even that keen on her. Unfortunately by the time she brought it out as a single (wondered why it never showed up on the next Live Lounge CD) they'd stripped the raw beauty and emotion from it. Hey ho.
