Default work experience problem!!!

Hello ,did anyone out there not have the relevant work experience needed for visa and still succeeded to emigrate? we are trying to apply with my wife as main applicant who's job is on modl [cook] and would reach 120 points easily,but because she hasnt worked as a cook for 8 years we wouldnt get the points.she has a list of catering qualifications as long as my arm.she could get a cooks job in UK for 12 months and then apply but we cant wait to get started. PLEASE HELP !!!!!!! :scared:

you will need a minimum of 12 months work experience in the last 18 months. end of story i'm afraid.

Im no expert but what about a STNI visa ? Cook appears on the Sydney STNI list it seems for example...
