My daughter came home from school with a yummy looking recipe. It said 250g Copha, chopped.
Whats that, never heard of it before. Also whereabouts would I fnd it in the supermarkets?

and great for making anything which has melted chocolate in the recipe! The copha helps it to stay only semi solid.

How is it pronounced?
The English in me would say Cop-ha
but the Italian would say Cofa.

It is very rich and loaded with almost 100% saturated fat. It has a unique silky and waxy kind of texture and is used mostly to bind together rice bubbles (rice krispies in other countries) into various sweets.
