summer holidays - peak periods

is australia day the end of the main holiday season in oz, similar to the august bank holiday in the UK. will the begining of feb be the end of the peak period.

More or less - the end of the school holidays determines the end of peak season. This year kids go back to school in the same week as Australia Day (because it's on a Monday). If it's later in the week, they will usually go back the following week. Some years they go back to school in very early Feb, it just depends on how the days/dates pan out.
