Our application arrived in Adelaide a few weeks ago, is it worth booking appointments now for medicals?
Or should we wait until they contact us, we just don't want to be waiting any longer than necessary.

Adelaide Processing Centre is extremely busy, it would be better if you waited for confirmation from them and their letter that requests your medicals. Police Clearances however are a strange animal and can take a long time to receive particularly from outside of Australia. These I would apply for now.

Which visa subclass have you applied for? If you have applied for a Skilled Independent visa (subclass 136) for example I wouldn't submit medicals yet.
However, if you have applied for a 139-Skilled Designated Area Sponsored visa, or have a State Nomination there may well be merit in having your medicals carried out sooner rather than later, as applications for these visas are the subject of a Ministerial Direction whereby they are being priority processed => a visa decision should be through in about 4 to 6 months as against the 12 months with a 136-application. This said, the safer route (and the one most likely to give you flexibility in terms of your required arrival in Australia for the purpose of visa validation) even for 139-applications is to wait until you have a case officer assigned to your application and you receive a letter asking you to submit your medicals.
I'm sure you're aware of the usual 12 month validity of the medicals and the impact on the "Initial Entry Date" shown on skilled visas:
