Silly question, but I will continue

Having a UK Driving Licence, will I have to take any sort of Driving Test in Melbourne?

No.

You just carry your UK documents with you. Most cars over here are automatics though.

You do need to switch to a Victorian licence after 3 months (is that still correct?). Easy to do, no test involved.

After 3 months you must take the written test.

Nope - you are right. I have the thick hat tonight ;-)
Looks like they have changed the rules since I had to take the written test in early '03.

They have Ireland on that exemption list now as well as several other countries.

Lucky you :-)

You do need to get your licence switched over tho, you can't just drive on your UK one, you have 3 months after you arrive on a perm visa to get to whichever offices deal with it with your UK docs, and its just a formality to get it switched over.
