So basically other than having an in demand skill/trade qualification there is no other option other than a holiday?

In all seriousness Steve, that is about the rub of it. There is no open door, there is no "well its a Commonwealth country so don't we get automatic Visa"...its a country which is doing very well and ...for now anyway...can afford to be choosey.

No, if either of you are on a WHV the kids cannot be in Australia.

No, she cannot. As soon as your dependants enter Australia you will be breaching the conditions if your WHV. No dependants means NO dependants at any time.
