Then why are there signs all over the highways saying "Keep Left Unless Overtaking"? It seems I must be the only one who has noticed this

To be blunt, I find Australian drivers to be arseholes.

Erratic lane changing is common place, if the see a gap in another lane they'll dart in. I've witnessed cars do this for 20km on the way to work and they are still only a car or two in front. Totally pointless.

Then you have all lanes blocked on a 80km/hr highway by 4 idiots driving in a convoy at 60km/hr. No way through them.

No courtesy at all, never let you in when signaling, in fact on many occasions they will speed up to try and block you from coming into their lane. It's pretty pathetic, and at times they even do it and it causes them disadvantage.

Truck drivers generally drive too fast.

I used to love driving in Queensland, after living in NSW for some years, but then more people from NSW moved up to QLD, and the driving standards have now dropped to similar standards as I experienced in NSW.

Because on roads with a speed limit over 90kph, you are supposed to keep left, but it is not required when the speed limit is less than that.

At least in QLD.

But the point still remains, I was talking in the context of highway driving

You are right about it being 80. I always associate it with the 90 limit where you MUST stay in the left, but if the limit is under, then everyone stays in the right, except me, as I drive on the left and go past everyone

Here in Melbourne other drivers report you if they see you chuck things out of the car
