Hello to all you knowledgable people out there!
We are applying on a skilled independent visa on the basis that my husband is a qualified accountant (don't all shout boring!) Our agent assures us that he will not have to get a job in this same profession. Part of our reason for moving is so that he can start afresh and do something new so any clarification on this would be greatly appreciated. Our sister in law got in on the basis of her nursing experience and believes that she has to do some nursing in order to comply with her visa.
Help please!
Bindy (due in Sydney April/May if all goes well....)

Welcome Bindy! As StephenWhite68 said, you can do whatever takes your fancy!
Although (here comes the negative bit) you should be aware that a lot of trades / professions in Oz require some kind of licence or certification. You can't just walk straight into a random job like you possibly could elsewhere - you even need certs to work behind a bar.
Disclaimer: And before anybody shouts, I never said that was a bad thing, just pointing it out.

Even if a carpenter decides to do a non skilled job, when things get tough you'll probably fall back on the skills you have. At least the skilled people are there which has got to be a benefit to the country in the long run.

If at some later stage you want to go off and open a shop that sells used matchsticks or whatever, then feel free! That's the luxury of PR in Aus!
