Depends upon where you are camping, when we camp 'further afield' from home, we take:
Tent
Sleeping bags & pillows
Sheets ( you can lie on the sleeping bags and just use the sheet on top if its hot...)
WATER!!!
Food
Small 2 burner stove and mini gas bottle
Beer and wine (
) in an esky filled with lots of ice
First aid kit, inc. 'Bushmans' mossie and insect repellant & sunscreen
Torch & batteries (!)
Camp chairs and/or large picnic blanket to lie on and gaze at the stars
Box of utensils - plates / cups / cutlery / bucket etc and a Billy can for boiling water for yer morning tea
Fishing rods (bait in beer esky) - you'll need to find somewhere to fish tho'
Small portable stereo and CDs (see star gazing above...)
If you're on a camp site:
Forget the mini barbie, most have them on site
Lead light - can be plugged into the power - powered sites are only a few $$$ more than an unpowered
And 'yes' - we need a bigger car!!! Currently have a roof rack and kids insist on bringing all their 'bedtime friends' (soft toys), plus bedtime books, gameboys, etc etc
Most important thng though is a road worthy vehicle if you're going bush.....

And don't clean your fish / de scale / leave remains / whatever near the waters edge either - a face full of croc is never a good look!!!
