First question - would you get a visa? You may find you have to retrain or upskill in some way.
$250 pw - you're joking? Not much for that.

I doubt you will get much for $250, a flat maybe.
As Quoll said can you get a visa, have you done a skills check to see if you are eligible?

Re: brisbane area rentals safe
Please do not rely upon a HND being equivalent to a degree, it definitely would not be considered that way. If you are lucky, maybe your occupation does not need a degree, but if it does, you will need to take a degree.

Suggest you check
realestate.com.au
and look at the rentals for the actual price of a rental in your preferred area.

my wife works in this sector and is only a wardy ... cleaner /porter takes the poor buggers for tea cleans the wards ,rooms common areas .$28 dollars and hour mate. not sure what a chef brings in but maybe there ll be some help with that coming up?... these guys aren't being negative they just don't wont you wearing rose tinted goggles. do not equate what your paying in mortgage or rent to what you would pay in Australia.the hospital she works at is in Brighton ,Brisbane,
cheapest rentals vary in the area... deception bay maybe?? not a class area but hey got to start somewhere . i suppose you could get a 3 month rental contract till you find your feet.
good luck with the two year plan all the very best

Though, without seeing them, for just $50 more it seems you can get older 2 bedroom duplexes/apartments right near the city centre:
