Default Best places to visit on a quick holiday!

We are going to make a fairly quick visit to Oz at end of May to get a bit of a feel for the our most likely areas to settle. We can't time off work for much more than 2 weeks (OH is self employed) so we are going to have be very organised. We plan to fly to Melbourne, have a couple of nights, then hire car to drive the Great Ocean Road, stopping overnight at places along the way, then Adelaide and Kangaroo Island, then fly over to Hobart, whizz around Tas, then back to Melbourne for return home. Reading that back, it sounds mighty ambitious, especially as we have 2 children!
Its open to change! Anyway, where would be your must sees on such a visit, any suggestions?
Sammy

In Tas, if you have time, visit Cradle Mountain, Strahan, Bicheno, Wineglass Bay, Tahune Airwalk, Hastings Caves, Narawntapu National Park, Mount Field National Park, Port Arthur, Launceston (Cataract Gorge especially), Gordon River, Stanley, Bruny Island (fairy penguins, camels, and chillaxing), Moorilla vineyard, Barilla Bay etc. etc.
