If a pizza is not made in a wood fired, dusty, black with soot, pizza oven; served slightly burnt at the edges on a bare table with a dubious vintage bottle of beer, a paper napkin, and no cutlery; it is not a genuine pizza. 'e tu vuliva a' pizza cu' pommarola 'ncoppa.'

i went dancing and eat to much pizza for my waist line or is it know a waste deposal line , yea and i done a bit o line dancing . oh well i must be dead but god them pizias were good

When the Italian partner is in the UK she always makes a bee line for the pizzas with pineapple which I'd always understood to be a cardinal sin in the eyes of the Italian pizza god. Says she can't get them in Italy.
Folks got any views on this?
I wouldn't eat such a thing - I long ago decided after extensive that the Quattro Stagioni was the one for me. So after that it's just down to the talents of the individual pizzeria.

Almost forgot. That great Italian god, the author of pinnochio, wrote a book in which one of the characters described pizza in the most disgusting terms, seeing it as a filthy dish which reflected very badly on both the cuisine and the people who cooked or ate it. Whilst i didn't agree with it all (I love proper Italian pizza) for quite a while I used to keep the quotation to hand in case the odd Italian indulged in a diatribe against other cuisines which went beyond a cookery critique and became pure racism. Not unknown unfortunately.
I have lost the quotation but perhaps someone may know it/be able to point/link to it. It used to be available via a bit of ckever googling I think.
