Sydney through Goulburn. Head out to Wagga and hit the Hay Plains. I would recommend stopping at Narrandera and hit the Plain the next day. Do not leave too early or you will find out why we call those big metal devices on the front of vehicles "Roo Bars"! Do not bother with Canberra as there is only one road in and out so you end up doing a big U-turn unless you want the coast road to Melbourne. Very pretty but a nasty extension of your trip. Then Balranald to Renmark (on the Murray River, paddle steamers, pretty town) and follow the signs. You can head toward Melbourne and head West from Shepparton to Bendigo, Warracknabeal to Nhil, Kaniva and Bordertown (S.A.) if you want more scenery. I used to do these trips once or twice a year when I was in the army as my family lives in Adelaide. You can also go through Murray Bridge if you like and that connects to a Freeway that is quite a quick trip and very good roads.
Rail is three options, Sydney to broken hill then Broken hill Adelaide, long way sod all to look at. Sydney to Melbourne on the Intercapital Daylight then Overlander Melbourne to Adelaide (get a sleeper last leg, Syd-Melb is seat) Then the mid option takes you halfway by coach and the other half train, very painful. Flying is about 2 hours and costs from $69 dollars and upwards (cheaper than the drive and I used to play the course by the airport, quite nice. Car rental is from around $100 for 3 days with insurance and roadside assistance. Don't forget to take popeye to the Zoo, the locals can explain it, there is also a nice Casino located at Central Railway Station if you fancy a nice night out. Enjoy your trip.

Good choice. If you get the chance nip up to Victor Harbour and visit the penguins. A day trip to Victor is an Adelaide tradition. You can duck up to Hahndorf or other Barossa Valley towns for a bit of history and some german tucker (food) and a great wildlife park at Monato (lions etc) or hand feed roos at Cleland National Park in the Adelaide Hills. Just a few ideas for you from an "ex-local". Hahndorf also has an excellent golf club and Adelaide and the Barossa have world-class wines for good prices.

If you go near the Murray route that google maps suggests when searching directions Sydney > Adelaide, I can recommend Deniliquin golf club or even Murray Downs just across the river from Swan Hill - this is reputedly one of the best courses along the Murray.

I believe it's good. Certainly seen photos of large carp caught near Murray Bridge.
