Default Chef life in Dubai and other states?

Hi, my wife and i planning on moving the family to Dubai, but will consider any good offer in Middle East. We are fed up with treading water in the UK and giving all our wages to taxman etc etc...
I am a sous/head chef
I would like to know how is the lifestyle as a chef over there.
What are typical working hours/ holidays/ tips/ pay?
I have been offered a position in Dubai as senior sous chef $3200 per month expat package including 2 bed accommodation/flights for family.
Is this a typical offer?
How has Dubai's financial problems affected hospitality over there? Do Europeans still get best jobs?
I am more into saving money rather than spend too much so is Dubai still a good place or is Doha/ Abu Dhabi/ Oman a better alternative?

Lots of questions here so appreciate any advice?
