Please spill the peas (sorry!). I'm a Lancashire lass and remember these as a kid, sold at Preston market by the hot chestnut man. Would love to know what they are, how to make them.

Anyway to prepare them:
Soak overnight in cold water with a teaspoon of bicarbonate of soda - be warned they swell alarmingly!
Next day discard the soaking water, place the peas in a pan, just cover with cold water, add another teaspoon of bicarb, bring to the boil and boil rapidly for 10 minutes, then simmer until the peas are tender.
Serve with salt and vinegar to taste (steveq likes his as gourmet black peas with sea salt and balsamic vinegar )

They are also called carlin or maple peas and appear to be available in the US as pigeon food but according to steveq there is some debate as to whether they are fit for human consumption....

Happy New Year and thanks a bunch for that. There's a bird food shop next to the natural food market down the road so shall have to check it out.
My family thinks that parched peas are a figment of my imagination.
Also for anyone who has the craving, there's a British Fish and chip shop in Buffalo, NY that also does pork pies and sausages, sausage rolls, black pudding, and stuff of that ilk and they ship. It is an award winning business. Am sure a google search would find them. They opened shop just after we moved away from that area, so we missed them, but reviews are good.
