Default Venison

A friend, who's husband hunts, just gave me some fresh venison. I enjoy trying to cook new things and this counts as new to me.

Any recipes or suggestions would be greatly appreciated.

I use Epicurious they have some great recipes there.

What cuts did she give you? Hopefully it's loin or deer burger (if not, she's not much of a friend).

Loin- chicken fried deer steak...soak in milk overnight to remove 'gamey taste'.
Burger- whatever... but watchout it's VERY low fat!!

bell peppers
onion
parprika
tumeric
cayenne pepper
cumin
a BULB of garlic
2 cans diced tomato
2 cans of tomato sauce
1 can tomato paste

leave to cook for a day in a crock pot - tastes great

I cube it, brown it and then sauteed onions in the drippings and then make a gravy with a bit of burgundy wine. Cook the venison until tender then serve it over homemade corn bread. Delicious

now I would love a recipe for moose as I have a roast in the freezer.

If you ever have the chance try bear ... really good.

Yum, got my mouth watering now! This is where my screenname comes from.

I have a bunch of recipes but they're all in the US (where I'm not ) so that's not helping much I'm afraid. Just a little tip: if it's too low fat for you, use a little pork fat (like if you made deer jerky, or even to mix with hamburger). Sounds gross but really helps!

Edited to add if it's hamburger, try a meat loaf... simple but good. Off the top of my head I throw in breadcrumbs, corn kernels, green bell pepper, onion, spices (whatever floats your boat). Serve thick slices with salsa.

Rete, I'll email my friend and ask if she has any good ones! Her hubby went hunting up in Canada last month and now they have a freezer full of moose too. I'm sure she has a few recipes, she's a hobby cook, and a good one at that. I don't think she did anything with the suggestion to make chocolate moose though.

Wow - great recipes and links! Thanks for all of the ideas.

I was given loin, not burger, so will try several of these recipes. I have enough for about 3-4 meals.

It'll be a good change after everybody gets fed up with leftover turkey!

Makes nice stews to, and soup, add a poached pear to the soup to compliment the taste, weird I know, but it is very nice

My husband's a prolific hunter so we have a freezer full and I mean full. I don't eat the stuff but he's out today picking up another two deer he killed and had butchered. He's out of control!!!

The meat is exceptionally lean and quite good for you as far as red meats go. I really do not think there is much better than a nice grilled venison steak. If you have not had venison before don't use a recipe that requires you to doctor it up too much that way you can actually appreciate the full flavours of the meat w/out it being covered by other strong flavours.

Hehe...I know what you mean, though the missus' family do use the meat, big family, lot of land....lot of hunting, so the odd crafty line trick has been used in the past, and they butcher the deers themselves, hang it in the barn, and then after a couple days or whatever, slabbed out on the kitchen to be carved out over the bin liners *l*

Speaking of, the other day, car behind me had a deer stuffed in the boot with the head and feet out either side, everytime the car hit a pot-whole both ends would do a dance, well creapy and grim that was
