No bird for Christmas dinner....our family has always had 'Roast beast" (sprime rib roast) complete with Yorkshire pudding (or the best facimilie an American mom can make) and all the trimmings. We roasted it encased in rock salt last year...and it was supurb.

We always have yorkshire puds with our roasts, I try to do them at least once a week, main emphasis on the word try!!! We use good ol' Aunt Bessie's ready made ones, they only take 4 minutes to cook & you're done, they're super, smashing, great!

trick is to have hot oil in the tray before dolloping the batter...and hot oven....lovely stuff
