You could do a circle maybe - Toronto through Buffalo down to NY, then up through Connecticut, Mass, NH and Maine to Quebec, and back down through Montreal to Toronto?

A lot of driving though!

I did that, not for holiday though so my times are just driving to get there, Toronto - Kingston NY (2hrs North of NYC) 1 easy day, Kingston to St Johns New Brunswick 1 not so easy day, St Johns to Toronto via Montreal 2 easy days. I was working in Toronto and St Johns and visiting family in Kingston.
You can add in your sightseeing time to get an idea.
