BASIC
INGREDIENTS
1/2 Ib (220g) self raising flour
1 pint (500 ml)milk
2 eggs
pinch salt
1 1/2 oz (40 g) lard
1 lemon
sugar for sprinkling
METHOD
Sieve the flour and salt into a basin, making a well in the centre. Break the eggs one at a time and pour into the well. Gradually beat the eggs and flour together, adding the milk little by little until creamy consisitency has been reached. Beat the batter for a few minutes to aerate it, and leave to stand for an hour or so if possible.
Heat the frying pan or griddle with a little lard and pour enough batter to cover the area needed. Cook until the top is dry, and then either toss or turn the pancake and cook the other side until brown.
Turn out onto a greaseproof paper, sprinkle with sugar and lemon juice as desired and roll up before serving.

The best results are usually when you just throw in the ingredients without a lot of measuring or weighing.
I did set the kitchen on fire when I was first married and tried to make pancakes. I have improved over the years but the OH has never let me forget it.
We like ours with ice cream melted in the middle and strawberry sauce dripped over..............umm heart attack time

I thought I'd give you all a 'heads up' as Easter is so early this year. 
It's Shrove Tuesday next week (Tues 5th) and Ash Wednesday the following day, so you often see people wandering around with ash on their foreheads.
Don't forget to get in some lemons or lemon juice for your pancakes if you're out buying groceries in the next few days!

PS: MOTHERING SUNDAY is also early this year....another little bit of info I found on the junior school's website is that in the UK, it's always on the 4th Sunday in Lent....so this year it is on Sunday 2nd March!

Did you toss them?
I too just had sugar and lemon juice on mine. Actually I only got to eat one....my son kept asking for more and I didn't want to make up extra batter mix just pour moi...
I was very proud of myself that I tossed all of mine and they flipped over perfectly instead of ending up on the floor.
