OT: Canadian Spaghetti Recipe

I was told it is a Southern traditional to include several “fun� recipes in a Southern cookbook. This book includes two such recipes:
“How to Cook a Husband� and “Elephant Stew�
Canadian Spaghetti
2 lb. lean ground meat
1 large green pepper
16 oz. of fresh mushrooms
1 very large white/yellow ion
5 to 6 cloves garlic
3 large cans tomato sauce
3 medium cans tomato paste
1 tablespoon oregano
1 teaspoon Italian seasoning
½ teaspoon celery seed
crushed chilies
olive oil
2 bay leaves
1 large Dutch oven (6 qt is good)
Pour a small amount of olive oil into Dutch oven. Chop garlic and onions, then sauté in Dutch oven until just cooked. Add ground meat; mix sautéed onion and garlic well. Cover; cook under low heat, stirring frequently, until meat is just done. Pour off excess liquid (water and oil). Add spices and crushed chilies to taste.
Mix spices into mixture; cover and cook on low heat until meat is well done. Add tomato sauce, bring to light bubble while stirring. Add tomato paste, mix until sauce slightly bubbles. Simmer on stove for 2 to 3 hours, stirring occasionally. Turn off heat and let cool. Cover, then put in a cool place (refrigerator or cool room). Reheat next day and serve over pasta.
Spices may be added or deleted to taste. Be sure to remove bay leaves before serving.

Ok Rete.......my husband wants to know why you call 'that pot' a Dutch oven!
