A well (or even poorly) weilded knife can do immense damage and is a terrifying thing to have to defend against. As are clubs, broken bottles, pieces of 2 by 4 with nails in them, etc.

Do you know the 21 foot rule? An average adult with a non-projectile weapon (eg a knife) can cover 21 feet from a standing start and hit you with it before you can react. Any vaguely accomplished knife carrier is as deadly as someone with a firearm at any distance you are likely to be attacked from. You wont even know you're being attacked with one until its too late.

Why start a gun fight in the proximity of kids unless absolutely necessary?
If I'm in a car with a kid I'd rather give up the car or drive out of the situation before shooting back (even better would be shooting back - accurately - while driving!); just the same is if I had kids in the house and someone broke in, I'd rather get the kids out of the house before staging a gun battle inside.
A carjacking is an ambush, so keep the car moving.

Those are all just stats that don't show the real causes.
