I use a bread machine and it is so easy but I have a friend here who bakes her own bread by hand. Her bread is so lovely...sourdoughs, granary everything, that I have been trying to do the same. Mine tastes OK if you can get past it's appearance.

Oooh post some recipes if you feel like it - I make homemade white bread I like, but that's all. I'd love to try some grain breads of some kind.

She is going to give me and another friend a bread making lesson, accompanied by lots of wine. I'll post some recipes then.

I made some white bread rolls...they were called French Dairy Rolls, I think.
They looked awful, all gnarled and hard, but they were very soft and really nice.

I can't find granary flour here and I suspect my friend buys all the seeds seperately and adds them....I'll keep you posted.

Oh, I miss proper granary bread!

I think I'll buy that Costco stuff again............ never mind what's in them...

Granary flour is only milled by Rank Hovis in the UK ...

Interestingly, just looked at the ingredients of one of my favorite breads (Renaissance Grain Bread, from Dominicks grocery). It has malt in it. The preservatives are citric and ascorbic acid, which I believe are natural preservatives

Water, Unbleached Enriched Wheat Flour (Wheat Flour, Malted Barley, Niacin, Reduced Iron, Ascorbic Acid, Thiamin Mononitate, Riboflavijn, Folic Acid), Sunflower Kernels, Rye Meal, Wheat Bran, Malt Whole Meal, Soy Meal, Linseed, Salt, Rye Flour, Sesame Seeds, Flax Seed, Vital Wheat Gluten, Spices, Citric Acid, Yeast, Ascorbic Acid

No sugar, and I think the chemical sound thingies are mostly vitamins. Keith said it's a bit similar to the Scottish whole-meal breads.

Now if I could just figure out how to make it myself...

Thanks - but it might be in an interesting state by the time it arrived in a week or two

I shoulda had mum-in-law bring one over - then I'd know what everyone is talking about. Happily, Keith likes our bread (now everyone else.... leave me alone on the bread now... no abuse for Keith and his two kinds of bread....)
