We're looking for potato cakes in the US. We can't find them anywhere. Any ideas?

Make them yourself?

I've seen them at Trader Joes, but that might just have been a St Pats thing and Stop and Shop or Hannafords sometimes have them, up in Maine at least, not seen them in my local ones, tend to have more of a Brazilian selection down my way

If you search it and dont find them, I will post a recipe for em...easy peasy lemon squeezy..oh I'll just do it anyway...

• 2 cups mashed potatoes
• 1 egg, beaten
• 1/2 cup plain or AP flour
• salt to taste
• 1 tablespoon butter/Marg
Directions
In a medium size mixing bowl combine mashed potatoes, egg, flour, salt. Mix well.
Melt butter in a large frying pan over a low heat. Drop (4 inch circles) of mashed potatoes into the frying pan. Pat to flatten to 1/2 to 1 inch thickness. Flip the potato cake over when the bottom is browned (about 10 minutes). Brown the other side (about 10 minutes
I add black and white pepper to mine. You can vary and experiment with them as you like..

My english Mum made them very similar to this...best I can do for now..

Exactly the same recipe my mother and aunt used and they were German born and raised.

Loved to do this with leftover mashed pot after thanksgiving. Add chopped scallions or carmalized onions and you have a treat.

Or we made potato pancakes from stratch. Altogether different as with the pancake the potato is not cooked first but mixed with egg, onion, flour, salt, pepper and then fried in oil until crispy brown.

The Jewish deli near my office sells potato cakes. No clue if that's atypical or not, but maybe check out a deli?

Are you talking about knishes? They aren't bad if they are seasoned properly. However, lately I find that they just aren't as good as I remember.

The difference is primarily in the treatment of the potato and ingredients i.e.

Boxty


8 oz/ 250 g/ 1 cup raw potato
8 oz/ 250 g/ 1 cup mashed potato
8 oz/ 250 g/ 2 cups plain flour
1 tsp baking powder
1 tsp salt
large knob of butter, melted

about 1/4 pt/ 125 ml/ 1/2 cup milk

Latke (polish or german)


grated raw potato
grated onion
flour
egg

No mashed potato in there and no baking powder and definitely no milk.

Serve after frying to a crisp with applesauce or sour cream.

Not a knish, an actual potato cake. They are large, very dense, greasy and delicious, served with mustard. I don't know if they are at all similar to what the OP seeks.
